There's a cookbook called
The Ethnic Vegetarian, by Angela Shelf Medearis that I love. It describes not only how to make traditional African food, but also Carribean and even American food with a twist. And, best of all, a lot of this book is on the web.
You want to do something different with your organic veggies? Try making the Ghanian Salad on page 10.
