Dangerously organic!
My friends Gabby and Robbie taught me so much about being a vegan. While we were at the homey Hawthorne Hostel in Portland's SE side, all sorts of soy was in use. There was soy as a substitute for milk. Soy seitan. Soy burgers. Tempeh. And, on and on. It's amazing what you can do with soy. Gabby explained how the protein in soy binds with ingredients in rice and forms complete proteins, so important to those who eliminate meat from their diets. She showed me how to prepare tofu by putting it on a plate with another plate on top of it. The gentle pressure helps the water escape. Then, the tofu is more absorbent when you cook with it. It then tastes like the flavors you add to your recipes. We also used liquid amino as a salad dressing. Delicious!
