Ron gave me some inspiration for this simple, amazing breakfast. He said tarragon went great with eggs. In my case, egg, because I read that the RDA is 300mg cholesterol and one cage-free specimen has 215 mg.
And here's the finished product. One cage-free egg, fresh tomatoes, peppers and tarragon from Ron's patch at McRorie Community Garden, all done in a little olive oil. I'm putting this in the Zoobird Veg Cooking Zoo, ovo-lacto section ;-)
