I called our local organic grocer, Ward's, and asked whether they had Kombucha. The person who answered transfererred me to WJ Jennings, who works in the natural foods section. He said "Do you want to buy it or make it?" I knew I got the right person! I came up to the store and he gave me a recipe. I bought some, pre-fab, too.
WJ made me a copy of his recipe, then said if I wanted to learn more I was welcome to drop by his house. So, I did. He gave me a large glass jar, a bunch of old wine bottles and a SCOBY. He also gave me some delicious salsa he made with tomatoes that were ripe and headed for the dumpster. Fringe benefit, he said, of working at a grocer. He said it was his first attempt. Man, they are so good. I think I have a spoonful left in the Bell jar from two weeks ago. I'm going to drop the empty jar off today and return the kindness with some raw Ethiopian coffee beand from WJ. I told him I learned how easy it is to roast your own coffee.
