There is so much stuff in here! Eggplant, celery, carrots, tomatoes, onion, garlic, olives, rice, lentils, and tofu crumble. In the center is a hollowed out cucumber with tzatziki sauce.

Ah, tzatziki sauce! I was just in Houston, TX where the famous Niko Niko's restaurant still (hooray) exists on Montrose. I love their tzatziki sauce.
