So, here's how it all began.
David Beasley and I were solving the world's problems at Maude's coffee here in the Swamp. I stopped to add some soy to Dave's coffee. Looked up and saw this incredible work of art called "Still Life in Baking"
Such a nice thought. And, later I surfed to the local pizza mecca
Satchel's website. You know, I love Satchel's. I love the van in front that you can eat in. See the
homepage for a picture of that 60's van. I like that the employees get great benefits like a week of paid vacation per year and matching IRA contributions. Satchel is the owner. He's been in the biz for years. Started out as a dishwasher in town. Finally opened up his own place in a kind of out of the way location here in Gainesville. People come to it because it's good despite the drive. Satchel writes well. His menus have his writing on back. Check out his

Anyhoo, I used to work at a pizza place in Texas when I was in college. I'll never forget the looks on patrons faces as I practically flew in the parking lot after a pizza delivery in my car with the campos (campus police) right behind me because of my speeding.
So, the wheels turned. I looked around thinking "How hard could this be?" I found a pizza dough recipe
online. But, better yet, I f
ound out that our local grocery store sold dough! Too hungry now to make dough. We'll do that next time.
Got some. Got some feta, spinach, broccoli, tomato sauce, onion, chili pepper, yellow bell pepper, and voila! It's cookin' as we speak.
