We have some amazing produce at the garden, don't we? What are some of our favorite recipes, using herbs, veggies and spices we grow ourselves? Here's Ron Chandler with a snippet of one of his favorites:
McRorie Summer Garden Stew
Incredients:
Collard greens, tomatoes, jalapenos, scallions (any onion), garlic, olive oil, red wine, salt, bell pepper, rosemary, parsley, basil, thyme, cilantro, yellow squash, and zucchini.
Cooking:
Using a slow cooker, pour 1/2 cup of olive oil and 1/2 cup of red wine in first begin to warm. Blend aromatic vegetables (jalapenos, scallions (any onion), and garlic) along with herbs (rosemary, parsley, basil, thyme, cilantro) in blender or food processor, and add pour over olive oil and wine. Add chopped tomatoes, yellow squash and zuccini; fill to the brim. Cook for 2-4 hours.
McRorie Summer Garden Stew 2
Incredients:
McRorie Summer Garden Stew plus blackened tempe.
Cooking:
Pour Garden stew in a shallow backing dish,
Place stew in oven, at 250 and cook until ~half the water has been vaporized.
Blacken tempe in a frying pan to taste.
Add tempe to top of stew, and allow to cook for ~10 minutes.
If you are ok with dairy, sprinkle a bit of jack cheese on top before serving.
